Ingredients:
- 2-3 medium sweet potatoes
- 1/4 cup brown sugar
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1 cup cranberries
- 1 large apple (or pear), peeled and thinly sliced
- 3 Tbsp. butter
- 1/4 cup orange juice
- 1/3 cup pecans
Directions:
- Boil the sweet potatoes until tender without peeling them beforehand.
- Peel and cut the potatoes into 1/4 in. thick slices
- Preheat the oven to 350 degrees
- Grease a medium-sized casserole dish with cooking spray or butter and layer in half of the potatoes
- Mix together brown sugar, salt, and cinnamon
- Sprinkle half of the brown sugar mixture over the potatoes in the casserole dish
- Sprinkle half of the cranberries over the potatoes
- Add the second half of the potatoes on top of the cranberries
- Add a layer of the apples (or pear) on top of the second layer of potatoes and then sprinkle the second half of the brown sugar mixture overtop the apples
- Dot the top with butter and sprinkle on the remaining cranberries
- Pour orange juice over the top of the dish
- Cover and bake for 30 minutes
- Uncover and sprinkle with pecans
- Bake for another 5 minutes
